What vegetables should I eat?

With so much diet and nutrition information out there these days you may be overwhelmed. But there is no debate that eating vegetables is good for you. For example, eating your veggies can help reduce your risk of may chronic diseases, including chronic inflammatory diseases, diabetes, heart disease, stroke, certain cancers, and also prevent early aging.  So then what vegetables should I eat? Vegetables are high in fiber which is broken down into short chain fats by your cut bacteria and in turn feeds your body.  Here is a list by category for the most beneficial vegetables that you can eat:

  • Sprouts
    • Watercress – shown to decrease the risk of lung, colorectal, and prostate cancer, and certain types of breast cancer.
    • Broccoli Sprouts – Can help detox environmental pollutants such as benzene.
    • Sunflower seeds – beneficial for immune and heart health.
  • Green Leafy Veggies
    • Kale – has a 3:1 carb to protein ratio and contains all nine essential amino acids.
    • Beet greens – contain 220 % of the RDI of Vitamin A.
    • Arugula – good for blood flow, decrease blood pressure, lowers inflammation and can improve blood vessel function.
    • Spinach – Helps maintain your brain function, memory and mental clarity.
    • Swiss chard – Helps with detoxification and can lower your risk of heart disease.
    • Collard greens – Can help lower your cholesterol levels better than any other cruciferous veggies
  • Peppers 
    • Bell peppers – Twice as much vitamin C as an orange and can lower inflammation
    • Banana peppers – Very low in net carbs.
    • Poblano peppers – Very high in iron.
  • Root Vegetables
    • Ginger – Properties include: antiviral, antioxidant, and anti parasitic.
    • Tumeric – Properties include: anti-inflammatory, anti microbial, and anti-cancer activity.
